Honey-Lime Chicken Sweet Potato & Black Bean Skillet
A perfectly tasty and healthy one pan Mexican recipe! These honey-lime flavors will leave you craving more! Load it up over brown rice for a burrito bowl or skip the rice for less carbs. Either way you’ll be absolutely in love with this meal!
Ingredients You’ll Need for This Recipe
Fresh veggies – sweet potatoes, red onion, garlic, tomatoes, avocado
Spices – chili powder, cumin, cayenne pepper, S&P

How to Make This One Pan Mexican Recipe
Saute sweet potatoes in skillet
Add onion and garlic and saute.
Add black beans, corn and some spices and heat through. Transfer to plate.
Cook chicken with spices in same skillet.
Whisk lime and honey.
Add veggies, avocado and tomato to skillet with chicken, toss with lime mixture and cilantro.
Sopapillas with Weeks Honey
Whisk together the dry ingredients. We’re using all-purpose flour, baking powder, sugar and salt.
Make a well in the flour mixture.
Then pour in the honey and milk.
Stir until a dough forms.
Rest the dough for 20 minutes.
Choose your choice of fat or oil. Heat it until it reaches about 300 degrees F.
Roll out the dough so that it’s 1/8-inch thick.
Cut the dough into squares.
Heat the oil further to 375 degrees F.
Drop the squares of dough into the hot oil.
Flip them after a minute.
Cook on the opposite side for another minute. Transfer to the paper towels.
Eat with Weeks Raw Orange Blossom honey!
Honey Taco Sauce
3 cups water
1 tablespoon corn starch
1 large jalapeno stemmed and cut into quarters, seeds left in
1/8 cup dry currants
1 6-ounce can tomato paste
3 tablespoons champagne vinegar
1 tablespoon chili powder
2 teaspoons salt
1 teaspoon cumin
½ teaspoon garlic powder
½ teaspoon Coleman’s dry mustard
¼ teaspoon liquid smoke
1 teaspoon Weeks Orange Blossom Honey
Mix a little of the water with the cornstarch to form a slurry. Add all other ingredients to a medium sauce pan along with the slurry and bring to a boil. Reduce and simmer uncovered for 15 minutes. Strain and discard solids. Cool and store overnight for the best flavor.
May be stored for up to one week in the refrigerator.
