Wildflower Honey Roasted Carrots with Thyme and Browned Edges

A beautiful Thanksgiving side does not need to be complicated. These carrots roast until tender with browned edges, then tumble through a buttery Wildflower honey glaze. Fresh herbs and a small splash of cider vinegar keep every bite bright beside rich gravy, stuffing, and mashed potatoes.

Why this honey belongs at the table

Georgia Wildflower Honey reflects the changing flowers of South Georgia, with balanced sweetness and floral depth. Each harvest has its own character. Here, its rounded flavor brings out the carrots’ natural sweetness while thyme and vinegar balance the glaze.

Let’s make it

6 side servings
15 minutes prep; 30–35 minutes cooking

Ingredients

  • 2 lb carrots, peeled and cut diagonally into 2-inch pieces; halve thick pieces lengthwise
  • 2 tbsp olive oil
  • 3/4 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1 tsp fresh thyme leaves
  • 2 tbsp unsalted butter, melted
  • 3 tbsp Georgia Wildflower Honey
  • 2 tsp apple cider vinegar
  • 1 tbsp chopped fresh parsley

Directions

  1. Heat oven to 425°F. Toss carrots with olive oil, salt, pepper, and thyme on a large rimmed baking sheet. Spread in a single layer with space between pieces; use two pans if necessary.
  2. Roast for 25–30 minutes, turning once, until almost tender and browned at the edges.
  3. Stir melted butter, honey, and vinegar together. Toss with the hot carrots and return to the oven for 5 minutes, watching closely so the honey does not scorch.
  4. Transfer to a warm platter, spoon over any glaze from the pan, and finish with parsley. Serve immediately.

A little holiday help

Cut carrots to a similar thickness for even roasting. Adding honey near the end gives a glossy finish while reducing the chance of burnt edges. For a smaller gathering, halve the recipe on one sheet pan.
