Raspberry Lime Fizz with Lavender Honey Ice

This sparkling raspberry-lime mocktail gets an aromatic twist from make-ahead lavender honey ice cubes. As the ice melts, Alapaha Honey and culinary lavender slowly flavor the bright berry-and-citrus fizz.

Plan ahead: Freeze the lavender honey ice at least 24 hours before serving

Lavender Honey Ice

• 1 tablespoon culinary-grade edible lavender
• 1/4 cup Weeks Honey Farm Alapaha Honey
• 3 cups water

Raspberry Lime Fizz

• 1 cup fresh or frozen raspberries
• 2 limes, zested and juiced
• 1/4 cup Alapaha Honey
• 1 1/2 cups water
• 4 cups seltzer or soda water, chilled
• Fresh raspberries and lime wheels, for garnish

How to Make Raspberry Lime Fizz

1. Make the lavender honey infusion. Combine the culinary lavender, 1/4 cup honey, and 3 cups water in a small saucepan. Bring just to a boil, turn off the heat, and steep for about 20 minutes, until cooled.
2. Freeze the ice. Strain if desired, pour the infusion into ice trays, and freeze overnight or until solid.
3. Cook the raspberry concentrate. Add the raspberries, lime juice and zest, 1/4 cup honey, and 1 1/2 cups water to a small saucepan. Crush the berries with the back of a spoon.
4. Simmer and strain. Bring to a low simmer and cook for about 10 minutes. Cool for 10 minutes, then strain through a fine-mesh sieve and discard the solids.
5. Build the drinks. Divide the lavender honey ice among four glasses. Divide the raspberry-lime concentrate evenly between them.
6. Add bubbles. Top each glass with chilled seltzer and garnish with raspberries and lime wheels. Serve immediately.

• Use only lavender labeled for culinary use.
• Prepare both the ice and raspberry concentrate ahead, then assemble just before serving.
• For a lighter drink, use less concentrate and more seltzer.
• For adults of legal drinking age, add a small pour of gin or vodka, or replace part of the seltzer with sparkling wine.
